Posh Tuna Jacket's

A modern twist on the old British classic. Crispy, salty, perfectly cooked, oven roasted Jacket Potato's, Crisscrossed beautifully and full with Somerset butter & skipjack tuna bound with a light lemon mayo. Freshly sliced spring onion, and chives complete this dish, oh and a generous sprinkling of lemon zest to top it off :) If your feeling adventurous add, some crispy smokey bacon for the ultimate Jacket Potato experience! Oh wow :)

Ingredients (for 2 x portions):

  • 2 x Large Baking Potatoes

  • Olive Oil

  • Rock salt & Black pepper

  • 2 x Skipjack tuna in spring water

  • 1 x Fresh Lemon Juice & Zest

  • Light Mayonnaise

  • 1 x Finely sliced shallot

  • A handful of fresh chives

  • 3 x Spring onions

  • A little butter


Method:

The tip to cooking a nice crispy jacket, that's buttery and fluffy on the inside is firstly the correct potatoes, and secondly the cooking. Get your oven to 210C and preheat it, wash your potatoes well, dry them off and then cut a crisscross in the top about 1cm deep. Give each potato a good drizzle of olive oil, on both sides, and a nice handful of rock salt. Pop them in the oven for about an hour, turning them over every 20 - 25 mins. After 30 mins drop the temperature to 180C, but put it back up to 200-210 for the last 5 - 10 mins, and make sure the potatoes are facing cross side up for the final cook.


To Make the Filling:

Whilst the potatoes are cooking, get on with the filling. Drain your tuna well, and pop into a bowl, season well with rock salt and black pepper, squeeze in a little lemon juice and a little lemon zest. Add in 1 shallot finely diced, some thinly sliced fresh chives and a little thinly sliced spring onion. Finley add a good dollop of light mayo and mix well. Add more mayo if needed, and check the seasoning at the end. Cover and pop in the fridge whilst the jackets are cooking.


To Finish:

Let the potatoes rest for a moment, then slice down the middle, add a nice knob of butter, and fill generously with your Lemon Tuna mix. Finish with more finely sliced spring onions, fresh chives and a little grate of lemon zest. If your feeling adventurous add, some crispy smokey bacon for the ultimate Jacket Potato experience!
