Grilled Butterfly Chicken Breast, Slow Marinated in Extra Virgin Olive Oil, Garlic, Lemon & Oregano

Tender, marinated chicken breast, flavoured with lemon, garlic, and classic Italian oregano, chargrilled to perfection. This butterfly chicken breast is great thinly sliced over salads, in pasta dishes, or as a starter.

Ingredients:

  • 2 x Chicken Breasts

  • 1 x Lemon

  • Extra Virgin Olive Oil

  • 2 x Garlic Cloves

  • Dried Oregano

  • Rock Salt & Pepper

  • Ziplock Bag

Method:

Take your chicken breasts, slice them down the middle to butterfly them, separting the mini breast fillets (2 x per breast). Pop these into a zip lock bag, to this, add some rock salt & pepper, zest of 1 x lemon, a good glug of extra virgin olive oil, 2 x crushed garlic cloves, a pinch of dried oregano, and finally, slice the lemon in half, squeeze in the juice and chuck the lemon in. Chuck the bag into the fridge for 2-3 hours, shaking up every 30-40 mins to ensure the chicken is coated/marinated well.


To Cook:

Once the chicken has finished marinating, let this sit at room temperature for 10 mins. Heat up a griddle pan or use a charcoal grill/bbq. Cook the butterfly marinated chicken breasts for around 10 mins, turning every few mins to color, finally finish these in an oven at 180C for 5 mins. Allow to rest, season well, slice thinly and serve, they won't last long :)
