Chilli Cheese Bites

Golden, crunchy, spicy, tangy, and oozing with melted cheese these Chilli Cheese Bites are a true favourite in our house! Serve them with Franks Red Hot Original, a wedge of lime, fresh coriander, and sliced green chilli. Gracias, de nada!

Ingredients:

  1. Jar of jalapeno chillies

  2. Green chilli's

  3. Full fat cream cheese

  4. Grated mozzarella

  5. Grated cheddar

  6. Plain flour

  7. 2 x Large eggs, lightly beaten

  8. Panko breadcrumbs

  9. Sunflower oil for deep frying

  10. Limes

  11. Corriander

Method:

Mix 3/4 of the cream cheese with a few handfuls of the grated mozzarella & cheddar. Add some sliced jalapeno's and a few teaspoons of sliced green chilli, season with salt and pepper & Franks Red Hot Original then roll these into balls.


Ideally, around the size of small golf balls, use some water on your hands, or plastic gloves to help you roll them. If the mixture is too wet, add more cheddar and mozzarella, if it is too dry add more creme cheese. Once these are all rolled out, set them onto a tray in the freezer for around 1 hour to chill and harden.


Just before the Chilli Cheese Bites are ready to come out of the freezer. Put the flour, egg, and breadcrumbs in separate shallow dishes, ensuring you season the flour with salt and pepper. Then roll the chilli cheese bites first in the flour, then egg, then breadcrumbs, making sure they are coated well. Pop these in the fridge for 30 mins, to set, then deep fry for around 2 - 3 mins, at 160C from fresh, or 3-5 mins from frozen. You will know when the Chilli Cheese Bites are ready as they will float to the top of the oil and become golden in color.


To Serve:

Allow the Chilli Cheese Bites to cool for a minute or so, sprinkle with rock salt. Serve with freshly torn coriander, sliced green chilli's, a wedge of lime and of course Franks Red Hot Original to dip :)
