Chargrilled Sweet Chilli Chicken Marinated in Garlic, Lemon and Coriander

A clean, vibrant starter that is easy to prepare and make and will be sure to put a smile on people's faces. Super moist marinated chicken chargrilled and served with a fiery sweet chilli sauce and peppery rocket.

ingredients:

  1. Chicken breast's

  2. Olive Oil

  3. Lemon Oil

  4. Fresh Lemon Juice + Zest

  5. Fresh Corriander

  6. Garlic Cloves

  7. Sweet Chilli Sauce - OR make your own! (#recipe coming soon!)

  8. Fresh Rocket

  9. Zip Lock Fridge / Freezer Bags

Method:

Take your chicken breasts and slice them down the middle carefully, opening them up as you go to spatchcock them, effectively making one large thin piece of chicken. Pop them into the Ziplock bag and drizzle with olive oil, season with rock salt and pepper, crush 2 x garlic cloves and throw them in, zest some of the lemon into the bag, cut the lemon in half, and squeeze this into the bag, then throw the lemon halves in as well. Grab some fresh coriander and throw a handful in, tearing the herbs up as you go. Drizzle over some Lemon Oil, seal the bag, removing the air, and set it in the fridge for 1-2 hours on a plate, turning every hour to ensure the chicken is well covered.

Before the chicken is ready to come out, turn on a griddle pan and get it searingly hot. Turn your oven on to 180 degrees celsius. Grill the chicken for around 4 mins a side to create char marks and beautiful flavour, then pop the grilled chicken breasts in the oven for a few minutes until cooked through.


To Plate: Let the chicken rest for a moment or so, drizzle the plate in sweet chilli sauce, and slice the grilled chicken into strips. place onto the plate and finish with some beautiful fresh rocket and a little lemon oil.
